100g basmati per person: 1 part rice to 1.5 part water = 150 ml per person.

Rinse rice with cold water - it will stop it from being clumpy in the pan.

Add rice into the pan. You can infuse with 3 cardamom pods (pierce them ) and add a few whole star anise.

Season with salt and pepper (before adding water).

Add cold water (always start with cold water). Lid on. Bring to the boil as quick as possible and then let it simmer for 8 to 10 minutes. DO NOT life the lid up.

Take out the star anise and cardamom pods out. Fork the rice through and serve.
