What is metabolism?
Sum of all enzymatic reactions
What is a catabolic sequence?
Degrade, through an oxidative process, simple organic molecules and retain some energy in the form of ATP
What is an anabolic sequence?
Consume energy and synthesize, in a reductive process, simple molecules when are assembled into more complex structures
What is reduction coupling?
The transferring of electrons via the co-enzyme NAD
What is ATP?
Free energy (adenosine tri-phosphate)
What is NAD?
A co-enzyme involved in cell redox actions - transfers electrons as NADH and received electrons as NAD+
What is glycolysis?
The degradation of sugar with production of energy (ATP) for cell growth
What is pyruvic acid?
a three carbon acid formed when glucose is broken down
What is respiration?
Uptake of oxygen to generate energy (pyruvate > o2 > co2 + h2o). Must have high o2 and low sugar
What is Crabtree effect?
When high sugar levels are present, it will suppress the ability of yeast to respire. Yeast will always choose fermentation over respiration with high sugar levels.
What is a fed batch system?
A way to control the amount of sugar being fed to yeast in a propagation system
Why does brewing yeast need a small amount of oxygen at the start of fermentation?
Synthesis of sterols and unsaturated fatty acids for strong yeast cell membranes
