What do you do when someone orders a seafood plater for 1?

A
Bring the person:
. A small plate
. Napkin (not necessary but nice to do)
. Oyster fork 
. Tongs 
. Two bowls (1 empty for shells, 1 filled with ice and lemon slices - then filled with hot water from coffee machine just before taking to table)

Everything goes to table straight away except for bowls which come out just before the plater comes out.

A

When it is a plater for more than 1 person: more plates and oyster forks needs.

Plus the shell bowl may get full quicker, so keep an eye out and be ready to get them a new one.

. Ask what sides they wants

A

A

If there are kids and lots of people ordering, ask if they would like the kids meals to come out first (coz kids can get impatient).

A

. Give them clean cutlery before their mains
. Constantly check and think to the future about what needs to be done next

A

Try to upsell cheesy garlic pizzas, Cobb bread (especially if there is a lot being ordered - as it may take a while for everything to be done).

A

A free drink comes with it, so make sure to not charge the customer.

Free drink = glass of house wine, house beer (VB cascade or carlton), soft drink or coffee.

A

Lots of the seafood dishes have entree and main sizes so remember which ones do.

Always check what size the customer wants if they don’t specify. Don’t just assume what size they want!
