What is Cognac
A
- A brandy that is produced in Cognac, France
- Must be made with specific grape varieties in the AOC (majority are Vgni blanc and small portions of Colombard and Folle Blanche are allowed)
- Double-distilled in copper pot stills and aged a minimum of 2 years in Limousin or Troncais oak barrels

- VS: “very special” aged a min of 2 years
- VSOP: “very superior old pale” aged a min of 4 years
- XO: “extra old” aged a min of 6 years (most are aged longer tho and then blended”

- Hennessy produces 40% of the worlds cognac
- Remy Martin and Courvoiser are the other top producers
