Imobolised enzyme
Enzyme fixed onto an inert material or each other or trapped in a membrane or gel-(Na alginate)
Advantages of immobilised enzymes
Reusable
Increases stability - less needed
Can be recovered - no purification necessary
Example of immobilised enzyme
Glucose isomerase
Converts GLucose to FRuctose
Fructose added to soft drinks
Active site
Part of enzyme that combines with substrate it is specific
Induced fit theory / active site theory
When the substrate enters the active site it induces a slight shape in the the enzyme
To make a better fit
Specificity of enzymes
Active sites only reacts with one substrate
Lipase on lipid
Pepsin on protein
Denatured enzymes
Shape is chamged this is IRREVERSIBLE
Due to extreme ph or heat
No longer does it’s job
