Fats and Lipids Flashcards
How are fats formed?
group of molecules called fatty acids consist of long chains of hydrogen and carbon atoms
fatty acids chemically combine with a molecule called glycerol to form fats
What are the two groups that fats are classified into?
saturated
unsaturated
What is the difference between saturated fatty acids and unsaturated fatty acids?
unsaturated fatty acids have at least one double bond between carbon atoms
saturated fatty acids don’t have any double bonds
Are saturated fats liquid at room temperature or solid at room temperature?
solid
Are unsaturated fats liquid at room temperature or solid at room temperature?
liquid
What are the functions of fats and lipids?
provide energy
absorbs fat soluble vitamins A, D, E, K
protect internal organs
provide insulation
What are the differences between fats and oils?
fats are solid at room temperature, oils are liquid at room temperature
fats come from animals, oils come from plants
fats are saturated, oils are unsaturated
What do lipids consist of?
carbon
hydrogen
oxygen
What are triglycerides made up of?
three fatty acid chains attached to a glycerol molecule
When do three fatty acid chains attach to a glycerol molecule?
in a condensation reaction
What is the bond between a fatty acid chain and a glycerol molecule called?
an ester linkage
How many ester bonds are formed in each triglyceride?
3
What is the formula for a triglyceride?
C8 H16 O2 - eight carbon molecules, sixteen hydrogen molecules and two oxygen molecules
What are essential fatty acids a type of?
polyunsaturated fatty acid
What are the two categories of essential fatty acids called?
omega 3
omega 6
