WHat are enzymes?
Proteins that have a 3D structure. Biological Catalyst that speed up the rate of chemical digestion.
3 things enzymes do
Convert substrate to products
Very specific- only work with one type of substrate
work best at physiological pH2.0 or 7.4
why is lipid digestion difficult?
Lipids are hydrophobic: they have a phobia of water. Enzyme access to substrate is limited.
What is the solution for lipid digestion?
Add a chemical that dissolves lipid in water. Bile salts surround the lipid molecules, allowing them to dissolve in water.
What is the enzymatic reaction to form triglycerides
Lipids + H2O——->Triglycerides
