Mercury in fish
toxic to nervous system
sources: tuna, shark, swordfish, king mackerel, tilefish, marlin, orange roughy and escolar
Choose canned light tuna (avoid albacore)

Muscle tissue contains 20% indigestible oil of wax esters which can cause gempylotoxism
Gempylotoxin - indigestible and causes dramatic laxative effect in some people

Dry: baking, broiling, grilling and frying (sautéed or deep fried)
Moist: poaching, simmering, steaming and microwaving

Moderate heat: 180-200° C
10 min/inch of thickness
Easily flakes, whiteish and tender
Overheating tightens protein bonds and water is squeezed out

Low temp: 71-82° C

Farmed vs. wild salmon
All atlantic salmon is farmed, pacific salmon is wild
Wild salmon eat smaller fish to get ω-3, lower in ω-3
Farmed salmon fed ω-3 pellets, higher in ω-3
Best choices: Wild pink salmon, wild sockeye, atlantic salmon farmed in recirculating indoor tanks
Wild salmon still contain some PCBs, higher in farmed
Farmed salmon are pigmented
Wild salmon are considered more environmentally sustainable
Otherwise eat artic char or rainbow steelhead trout
