Riesling - Flavour Profile
Colder climates: produce wines with green fruit flavours and often floral notes.
Warmer climates: richer in flavour with more predominant citrus and stone fruit, but lose some delicacy.
Maturation develops flavours of honey and toast but still high acidity. Aromas described as petrol like.
Riesling - Climate Capabilities
Capable of producing a variety of styles from different regions.
Very tolerant of cold winters and buds late so avoids spring time frosts, making it suitable for colder climates
Germany
Can be made in a range of sweetness levels.
Sweet wines are typically made from botrytised grapes.
In premium wines, any sweetness will be balanced by high acidity creating wines that are concentrated and refreshing.
Austria
Can be made in a full range of sweetness levels, but most wines are either dry or very sweet.
Alsace
Mainly specialises in dry Riesling.
Late harvest and botrytised sweet wines are made when vintage conditions permit.
Australia
Well known, particularly from Clare and Eden Valleys.
Often bone dry, with refreshing acidity, and mainly display aromas of lime.
New Zealand and the Finger Lakes AVA of New York
Fruity, off dry style.
