Moscato

A

-Muscat grape that has high residual sugar and low acid

T.N. - perfumed aromas or mandarin orange, ripe pear, sweet Meyer lemon, orange blossom and honeysuckle

Pairing - poultry, pork, shellfish, white fish, medium to firm cheese

*moscato d’asti is light-bodied and sweet with tropical fruit, lightly bubbles and low alcohol (5.5%)

Sauternes

A
  • Mostly semillon with sauv blanc and muscadelle
  • From Bordeaux, France
  • Full bodied, sweet, late-harvest white wine made from grapes affected by noble rot
  • Serve chilled
  • Can age 5-40+ depending on vintage

T.N.- bright acidity, honeyed apricot, butterscotch, caramel, coconut, mango, ginger, marmalade, citrus themes, tropical fruit, honey-suckle and toasted baking spices

Pairing - blue cheese, foie gras, fruit-themed desserts

Tokaji

A
  • Hungarian region of Tokaj
  • 3 grapes are furmint, harslevelu and muscat de lunel

T.N. - vivid gold with honeyed apricot, orange peel flavours and dramatic acidity

Pairing - foie gras, Asian fusions, dry and blue cheeses, fruit and chocolate desserts

Madeira

A
  • Fortified wine from the island Madeira in the middle of the Atlantic Ocean
  • Its unique taste comes from repeatedly heating the wine
  • Slight sweetness offset by acidity

T.N. - roasted nuts, stewed fruit, peach, orange peel, caramel and toffee

Pairing - fatty meats, creamy soups, custards, souffles and rich cheeses

Port

A

-Typically richer, sweeter, heavier and higher in alcohol than unfortified wines this is caused by the addition of distilled grape spirits to fortify the wine and halt fermentation before all the sugar is converted to alcohol and results in a wine that is usually 19-20% abv

  • Ruby (red) - deeply colored, blackberry, raspberry, cinnamon and chocolate
  • Tawny - sweet barrel-aged port with oxidative nut, raspberry, caramel flavors
  • White - apricot, sweet baked apple, roasted nuts
  • Rose - strawberry, raspberry, cranberry sauce and caramel

Pairing - blue/washed-rind cheese, chocolate, caramel desserts, salted and smoked nuts
