What is Tequila
- Distilled beverage made from the blue agave plant (takes about 7 years for a plant to mature for harvest)
- Steamed inside industrial ovens before being distilled
Blanco
“Silver” or “plata” bottled soon after distillation and is the purest expression. Typically unaged, but may be in contact with oak up to 60 days. Had agave and citrus notes with a touch of black-pepper and grassy undertones
Resposado
Means rested, minimum 2 months in an oak vessel, balance of blanco flavor of agave and citrus with notes of vanilla, caramel and toasted oak (typically aged for 60-364 days)
Anejo
From ano which means year, spend at least 1 year in oak barrels, usually ex bourbon casks, results are oak, vanilla, raisins and caramel with a long, complex finish (typically aged 1-3 years)
Extra Anejo
“Ultra-aged” spend a minimum of 3 years in oak barrels. Hints of vanilla, coconut, light agave, oak, caramel and dried fruits
What is Mezcal
- Means oven cooked agave
- Mostly made in Oaxaca
- Can be made from a variety of agave plants (Espadin)
- Cooked inside earthen pits that are lined with lava rocks and filled with wood and charcoal (smoked) before distilled
T.N. - smoke and new leather dominate the nose with flavors of brown sugar, honey, ash, wood and chocolate
