Three phases of fermentation cycle

  1. Yeast growth phase - yeast cells absorb the oxygen in the wort
  2. Fermentation - the ueara are devouring the sugars and producing alcohol and CO2
  3. Sedimentation - with the wort now devoid of oxygen and sugar, the yeats begin to flocculate and settle to the bottom of the fermenter
