Crème Brulee

A

Classic vanilla custard (Eggs, Sugar, Cream) cooked in the oven using a water bath technique (Cooking the custard in a
vessel nearly submerged in water to prevent the outside from burning). It is then removed, cooled, then topped with
aranulated sugar and bruleed (The sugar is torched, melted, and cooled until the sugar turns to a glass-like texture.

Baked Alaska

A

A round of chocolate cake is soaked in cocoa simple syrup, topped with a large scoop of homemade vanilla ice cream with
cocoa nibs. It is then covered in Italian meringue. At the table the baked Alaska is flambeed with silver rum and will be
cut then topped with wine soaked cherries
