Part 3 Flashcards

1
Q

What are the advantages and disadvantage of internal and external panelists?

A

Internal:
Adv:
1. People on the spot
2. No payment
3. Confidentiality
Disadvantages:
1. Knowledge of product may influence results
2. Availability
3. Difficult to replace panelist

External:
Adv:
1. Availability
2. Large number
3. No risk of offending if not chosen
Disadv.
1. Expensive
2. Must be trained
3. Old or student
4. Risk of loosing after payment

Q

What is a food action scale (FACT)?

A

A Food Action (FACT) scale is a form of hedonic scale. It is assumed that what
the panellists say they will do is correlated with how much they like the product

Q

What is a disadvantage of leas significant difference test (LSD)? And the Scheffe’s test

A

That difference may be found even if they are no present.

On the other hand, the Scheffe’s test is too precise and might no notice differences where they actually are.

Q

What is ratio data?

A

Data where the panellist will be given a product which is used as reference for ranking or the panelist is free to choose the ranking and following samples change according.

Q

What is time intensity testing and when would you use it?

A

Analysis of change in flavor, texture over time by scoring at interval or continuous tracking. Might be very laborious work as different panelist might chew differently and/or use the continuous tracking paper differently.
