-Rare- Selenium found in a wide variety of foods eaten on a regular basis

-Thought ot interfere with SULPHUR compounds, and even replace Sulphur in body- very similar biochemically- may decrease a number of ENZYME ACTIONS
-Long term ingestion- CAUSE PROBLEMS WITH TOOTH ENAMEL AND STRENGTH
-High levels increase tooth decay

-Animal foods- lose a little during processing- canning seafood- 10% loss
-Processing wholegrains- large loss- 60% loss
