What is eiswein?

A

Made from berries that are literally frozen on the vine and pressed while frozen resulting in a more concentrated juice with less water creating a sweeter dessert style wine.

A

Süssreserve is when you add unfermented grape juice to wine after fermentation to increase residual sugar (which consequently lowers alcohol content.) Often found in German rieslings. The finest estates do not rely on süssreserve, but instead rely on stopping the fermentation to acheive their style.

A

German for ‘noble rot’ or ‘botrytis cinerea’. Instrumental in the production of beerenauslese and trockenbeerenauslese.

Causes the grapes to shrivel (evaporating water) leaving the grower with more sugar concentrated grapes.
