Bleu Cheese Dressing

Caesar Dressing

Pale yellow color, heavy consistency with a slightly grainy texture, zesty with good cheese and garlic flavor with a hint of anchovy

Honey Mustard

Italian Dressing

Zesty, sweet, honey flavor followed by oregano, sweet basil and garlic, golden in color, held at 40 on the line and stored at 70 in bulk
Salad Greens
1” x 1” chop, crisp and cold, good mix of color, no browning, must be dry
Caesar Greens
1” x 2”-3” ribbons, crisp and cold, light green in color, no browning, limit the use of tips and outer leaves, must be dry
Shredded Cheddar/Jack
1/16 x 3/16 x 2”-3” shreds, moist not dry, less more often
Shredded Parmesan
3/32” x 3/4”-1”
Rattlesnake Bites
Bites are round shaped and weigh .8 each, when cooked the will golden in color and intact no leaking. Flavor should be bold with the heat of jalapeño and the sweet flavor of red pepper. Texture should vary between the coarseness of the cornmeal and the smoothness of jack cheese. Finished weight .8 cook time 2 minutes
Creole Mustard
Creamy texture; spicy mustard flavor; followed by zest of lemon
Tarter Sauce
Smooth chunky texture; pale white color; dill and lemon flavor with a sweet zest from the relish
Ranch Dressing
