What is invertase?
Used mainly in food manufacture, made by cultivating a yeast called - Saccharomyces Cerevisae.
What enzyme is obtained from sugarcane?
Sucrose.
What does invertase do?
Invertase converts sucrose into glucose and fructose. An alternate name for invertase is sucrase.
Which enzymes are commonly found in washing detergents?
Proteases and lipase.
What is protease?
Protease breaks down proteins such as haemoglobin in blood stains.
What is lipase?
Lipase breaks down fats such as grease.
What is the name of the enzyme found in a calves’ stomach?
Chymosin.
What is chymosin used for?
Affects the proteins in milk, making the milk seperate into curds (mix of protein and fat) and liquid whey. Then pressed together to make cheese.
What is an enzyme?
They are proteins, produced by living organisms, natural catalyst.
