A

Vitamin c is a water souble & can easily be leached into any liquid & exposure to light reduced vitamin c content through oxidation & peeling exposes the surface to air speeding up oxidation & reduce loss by avoid soaking & don’t prepare far in advance & avoid peeling if possible or peel thinly as most vitamin c is under skin & use acids such as lemon juice to slow down loss of vitamin c through oxidation

A

Vitamin b is stable in tempetures up to boiling point & grauduly destroyed if heated above boiling point for long period of time & folic acid is a water souble vitamin & destroyed by prolonged cooking & reduce loss by quick methods of cooking such as steaming , stir frying ,microwaving & pressure cooking to preserve the vitamin

Vitamin c destroyed by low temps , lost through leaching in water , prolonged cooking leads to vitamin c being lost through leaching or exposure to air & can be lost through reheating foods & reduce loss by add to boiling water & cook for minimum time & use as little water as possible to prevent loss through leaching & choose cooking methods such as stir frying , microwaving to reduce loss & cook short period of time & serve immediately
