6-Nutritional Addtives Flashcards
(18 cards)
Nutritional Additives Definition
Adding of vitamin, mineral, amino acids, fatty acids, and other chemical compounds to food to improve/ maintain nutritional food quality
Purpose of Food Additives
- Restoration
- Nutritional equivalence of a substitute food
- fortification
- Ensuring the composition
- Selling point
- antioxidants (vit. C and E)
- coloring agent ( beta carotene)
3 Form of Nutritional additives
- Powder
- Encapsulated in a gelatin
- Emulsified in oil
2 critical factor
- stability
- Miscibility with food matrix
Vitamins differentiate into
Water and Fat Soluble
Examples of Fat soluble vitamins
Vitamin ADEK
Characteristic of Fat soluble vitamins
- Link to lipid metabolism
- Can be stored in human body for daily supply
- Excessive can lead to toxicity
Characteristic of Water soluble vitamins
- Not stored in body tissues in high amounts
- excess is excreted in urine
Mention minerals that are in the major and trace category
Major : Ca, P, K, S, Na, Cl, Mg
Trace : Fe, Zn, Cu, I, Mn
Mention minerals that are in the major and trace category
Major : Ca, P, K, S, Na, Cl, Mg
Trace : Fe, Zn, Cu, I, Mn
Amino Acid capable in both reaction of body which are _____& ______
Acid & Base
What is Essential amino acids?
Amino acids that only can be get from food and cannot be made by the body
Characteristic of Amino acid
- Non volatile
- Pure form in crystal white solid
- decompose at 185-342 C
- Water soluble
- Can form complex salt (inexpensive, more stable)
2 Essential Fatty Acids are
Omega 3 & 6
Trans Fatty Acid can Increase ________ and Reduce ________ relative to parent natural fat
LDL Cholesterol & HDL Cholesterol
Consequences of LDL Cholesterol Build up
Arteries become narrow & hardened - reduce blood flow - CVD risk
PUFA are prone to _____ which relate to _______ off-flavor and decrease of _____
Oxidation; Rancidity; shelf-life
Method to prevent oxidation
Microencapsulation unsaturated oil
