lysis = splitting

A process of self digestion, the destruction of a cell through the action of it’s own enzymes. Yeast autolysis is used in the making champagne. Gives it flavor and texture, mouth feel. Otherwise known as Sur Lie or wine lees.

A

Unfermented sterile grape juice, equal in quality to the wine. Can be blended into the fermented wine giving it a fruiter and sweeter character. Practiced in low to mid quality wines.
