Novello: Like Boaujolais nouveau and released only weeks after harvest

Recioto: dessert style. Tops of the bunch or “Ears” extended to the sun to ripen faster and picked to dry

Ripasso: after the recioto grapes are picked, the vineyard is “Repassed” for second picking

Amarone: dried over 3 months in special lofts until rasins but kept the cool climate acidity. Aged in Slavonian or French Oak
