Schochu

A

A japanese distilled liquor made from any range of products including rice, barley, wheat, potatoes or beets.

It is clear and similar to vodka.

Usually it is distilled to 25%, lower than most spirits.

Umeshu

A

Apricot liqueur.

Made from steeping Ume fruit (Japanese apricot) in schochu, or sake and sugar.

The fruit is first washed then steeped for several months to allow the fruit to fully infuse.

This is a traditional Japanese liqueur with a long history in the country.
