9
Q

Factors affecting enzyme action

A
  • Surface Area
  • Temperature - Increase in temperature increases reaction rate till an optimum. If it gets too hot (past the optimum), the enzyme denatures and stops functioning.

Q

How to safely test a food for the presence of sugar?

A

Place a small amount of food in a test tube and put the test tube in a test tube rack. Then add Benedict’s Solution to the test tube whilst wearing goggles. Then place the test tube into a warm water beaker. Then the Benedict’s Solution turns brick red if sugar is present.
