500ml Alginate mix
Lemon caviar
250ml Lemon gomme
500ml Alginate mix
Strawberry caviar
250ml Strawberry gomme
500ml Alginate mix
Earl grey gomme batch
440gm sugar
7 earl grey tea bags
Hot water, to the litre line
Sit for 30mins, remove tea bags
Cabbage mix batch
1 sliced red cabbage
1 ltr hot water
10gm bicarbonate of soda
Stew cabbage for an hour then add bicarbonate when cooled
Citric acid batch
1gm citric acid per 100ml water
Fab batch
Part 1 (tip) 45ml vodka 22.5ml liquor43 60ml gomme 50ml whipping cream 100ml water
(Blend, pour into moulds and 3/4 freeze)
Part 2 (bottom)
30ml vodka
45ml strawberry gomme
100ml water
Make part 1 then fill moulds 2/3
Make part 2 and fill rest of mould
Tip in choc, hundreds and thousands and replace in the freezer

Grog batch
100ml Orgeat 100ml Gomme 100ml Velvet falernum 200ml Brugal spiced 200ml Brugal anejo 100ml Cointreau 200ml Brugal White 10dashes angostura bitters
Smokey batch
700ml Jim bean
250ml water
200ml demarera gomme
10ml Angostura bitters
Chantilli foam batch
800ml whipping cream
200ml vanilla gomme
