Structural functions
Long chains running parallel to each other, linked by cross bridges
Collagen, found in tendons (tendons join muscles to bones)when a muscle contracts the bone is pulled in the direction of the contraction
1o structure unbranched chain
2o structure tightly wound and lots of glycine helps tight packing
3o structure chain twisted into second helix
4o structure, 3 of these chains, wound together like a rope

Why lock and key was disproved

A

Observed that other molecules could bind to enzymes at sites other than the active site and this altered the activity of the enzyme
This suggested the enzymes shape was being changed because of this and is therefore flexible
