What are the four main ingredients in beer?
- malted grain (usually barley
- hops
- water
- yeast
Difference between hard and soft water, and what they are best for
hard water = more minerals, works well with hops, good for ales
soft water = less minerals, softer body and mouthfeel, good for lager and pilsner
What are hops?
Hops = a plant that grows in temperate climates
- contain resins and essential oils that contribute flavour, aroma, dryness and bittnerness to beer
- also act as preservative
what alpha acids and beta acids provide
alpha acids = more bitter hops
beta acids = more aromatic
What are noble hops vs. modern hops?
nope hops = refer to race of the plant, intentionally cultivated - a group of traditional European hop varieties renowned for their delicate, floral, and spicy aromas, making them ideal for classic lager and Pilsner styles
modern hops = wild hops found in specific city or region - often named after the farmer who discovered them
What does IBU stand for and what does it measure?
International Bittering Units - measures bitterness in beer
- calculated from hops alpha acids content
common IBU thresholds
0-15 - not noticable
20 - recognition point
30+ - bitter
40+ - quite bitter, proper pilsners, english IPAs etc
60+ - very bitter and floral IPAs
100+ - maximum threshold
What is malt? Which malt is most common for beer?
- a cereal grain that is germinated
- barley
qualities of cereal grain that make sugars harder to access
- hard husk, lower protein, high starch
How and when does yeast come into play in beer making?
- added to malt which creates wort
- converts sugar to alcohol
Name the yeast strain responsible for top fermenting
saccharomyces cerevisiae
Name the yeast strain responsible for bottom fermenting
saccharomyces pastorianus
which style of beer comes from top fermenting? which style comes from bottom fermenting?
top = ale
bottom = lager
what determines top vs. bottom fermentation
- temperature
- top ferments at warmer temps - 18-24 C
- bottom ferments at lower temps - 7-13 C
