3
Q

What are sugars divided into?

A

Sugars are divided into single and double sugars depending on the size of the molecule.
• Easy to break down and absorb = burst of energy.

16
Q

what do artificial sweeteners add?

A

Artificial sweeteners add
sweetness without increasing the
energy content.

17
Q

what are Complex carbohydrates

A

polysaccharides:
poly-many
saccharide-sugar

18
Q

what is starch?

A

• Main food store in plants
• Made up of many glucose molecules
• Size of granules vary with each plant

19
Q

what is Pectin?

A

• Found naturally in some fruits
• Forms a gel in water and helps jams to set
• Is thought to reduce cholesterol in the blood

20
Q

what is Glycogen?

A

• Made from glucose by humans
• Small amounts stored in liver and muscles as energy reserve

21
Q

Sources of Starch

A

– Root vegetables e.g. potato, carrot, parsnip, onion
– Cereals and cereal products e.g. wheat, flour, bread, pasta, oats

22
Q

how much total food energy comes from carbohydrates?

A

50% of total food energy should come from carbohydrates.

23
Q

how much total energy should come from starchy

A

45% of your total energy should come from starchy carbohydrates,
milk sugars and fruit sugar.

24
Q

how much total energy should come from free sugars?

A

No more than 5% of your total energy should come from free
sugars.

25
overall total food energy
Therefore, 50% of total food energy comes from fat (35%) and protein (15%)
26
what is Deficiency
• Unusual • Lack of energy – drop in level of glucose in blood • Weight loss – body will start to use fat stores if continued • Severe weakness – if fat stores depleted, then protein stores used
27
what is Excess
• If not used = converted into fat and stored in body. • Could lead to obesity • Obesity could lead to other health issues: – Increased risk of type 2 diabetes – Cardiovascular disease
28
what is dietary fibre
• Is a polysaccharide (many sugars) • AKA non-starch polysaccharide (NSP)
29
what is dietary fibre found in
Wholegrain cereals and products e.g. brown rice, wholemeal flour – Fruits and vegetables – Pulses e.g. beans, lentils (especially skin)
30
functions of carbs
• Healthy digestive system • Weight control • Prevents bowel disease: – Constipation – Diverticulitis – Bowel cancer • Providing soluble fibre (can lower blood cholesterol)
31
what is soluble fibre
Slows digestion and absorption of carbohydrates • Helps control blood sugars • Can reduce blood cholesterol
32
solube fibre sources
• Oats, nuts, legumes • Fruit e.g. prunes, bananas, apples • Vegetables e.g. potatoes, broccoli, carrots
33
what is insoluble fibre
• Cannot be broken down by the body/…………………………………. • Absorbs water • Swells = bulkier stools
34
insoluble fibre sources
• Wholegrain foods, brown rice • Fruit and vegetables peel/skins • Nuts and seeds
35
what does excess lead too
• Too many cereals = limit absorption of iron and calcium
36
what does Deficiency lead to
• Constipation • Could increase risk of bowel cancer
37
Reference Intake for Fibre
• Adult = 30g • Children less due to size
