100% Xarel-lo, ages on the lees for a minimum of 10 years. The 1st vintage was produced from 1999 and was the 1st single vineyard sparkling wine in the Penedes.

What is important to know about Recaredo?

A

Recaredo was founded in 1924, in Sant Sadurni d’Anoia. They were pioneers for oak usage, longer aged wines, and for dry Cava.

All cuvees are vintage dated and brut nature.
Everything is organic and done by hand, including remuage and disgorgement

BUT it is stipulated that the max. percentage of production that can be vintage Champagne is 80%
It would be Grand Cru, except the og plot at the Abbey is classified 1er cru.

Oenoteque was rebranded as P2/P3 in 2014

They make a Brut and Brut Rosé and both are made into the P2/P3 concept. They release the basic around 9 years, the P2 around 18 years, and the P3 around 25

What is the idea behind Dom P’s Plenitude? What are the current releases?

A

The wine is left in contact with the lees for a slow, but active maturation, carefully monitored by the chef de cave. When a window of opportunity, or “plénitude”, presents itself, some of the wine is disgorged and released to consumers.

White: P2 from 2003, available since July 2021
Rose: 2004, released in September
