Ramos Gin Fizz
2 oz gin 3/4 oz rich simple syrup 1/2 oz lemon juice 1/2 oz lime juice 1/2 oz egg white 2 oz heavy cream 2 dashes orange flower water 1 bar spoon vanilla extract 3 oz sparkling water 1. Ensure glass is chilled 2. Dry shake ingredients for 2-3 minutes 3. Add sparkling water directly to shaker tin and stain into the chilled collins glass until 3/4 full. 4. Place in refrigerator to let the head stiffen 5. Remove glass and poke hole in center. Add the rest of the cocktail through the hole, letting it rise above the rim of the glass. 6. Zest an orange on top and add straw down the center.

Squeeze the small amount of juice and oil there is into the rocks glass. Add the syrup, rhum and lime coin to glass. Muddle. For a traditional Rhum punch serve immediately at room temperature with out adding ice. Ask guest if they would like ice. If so, add ice and stir then serve.
