Modified atmosphere packaging
where the gases within a package are adjusted to provide a mix of gases that will extend the shelf life of a product
- a vacuum removes air and fills the remaining space with gas (eg nitrogen and carbon dioxide)
Example: gas flushing extends the shelf life of fresh meats from 3 days to 21 days
Fresh pasta - three days to 60 days

S - sous vide

Sous vide
Where food is cooked then vacuum sealed and placed in the freezer untill consumption. It is then reheated in boiling water
Active packaging
Refers to the use of materials devigned to interact with the air in the package, creating an atmosphere that results in a longer shelf life
- eg sachet containing ethelene, oxygen or carbon dioxide can be used to absorb udersirable gases that can form as the product ages (seaweed sachets)
