Modified atmosphere packaging

A

where the gases within a package are adjusted to provide a mix of gases that will extend the shelf life of a product

  • a vacuum removes air and fills the remaining space with gas (eg nitrogen and carbon dioxide)

Example: gas flushing extends the shelf life of fresh meats from 3 days to 21 days

Fresh pasta - three days to 60 days

A

Where food is cooked then vacuum sealed and placed in the freezer untill consumption. It is then reheated in boiling water

Active packaging

A

Refers to the use of materials devigned to interact with the air in the package, creating an atmosphere that results in a longer shelf life

  • eg sachet containing ethelene, oxygen or carbon dioxide can be used to absorb udersirable gases that can form as the product ages (seaweed sachets)
