Items that are close to both parties (with hand reach/being held)
When should you use “That/Those”?
Items that are close to one party (maybe requires a quick journey)
When should you use “That/Those (over there)”?
Items that are far away from both parties (Across a room)
When should you use the generally-implied “That/Those (over there)”?
When the thing being talked about is generally confounded or strange or unknown. These specify unspecified things, ideas, and situations. Also, if you don’t know the gender of the item/person. Always singular!
“I like those shoes”

The noun (sustantivo) in question is agreed with in gender and number.
