Specific - mobility (which may be relied on to avoid redundancy situation)

And General - have been relied on in Bateman v Asda but generally thought to not be able to be relied on other than if reasonable or minor changes.

Does variation with consent need to be in writing to be valid?

No but it is helpful especially if disputed or to their detriment
