The conservation of food after harvest or slaughter for future consumption.

- Increase shelf life- extends the time a food product remains safe and consumable
- Reduce microbial proliferation/multiplication of Salmonella, E. coli, etc.

- Lowering the TVC of bacteria and pathogens, TVC measures the total number of living microorganisms in a food sample.
