Further explain the steps to make bread.

A

Flour is made into dough by adding water and yeast to make bread
Salt is added to improve flavour and ascorbic acid to improve the breads quality
Dough is kneaded to tighten the mixture. As the yeast ferments and reacts with the other ingredients it produces alcohol and carbon dioxide
The CO2 causes aeration in the mixture causing it to rise and expand before baking
While in the oven the water the water present causes the starch in the dough to swell and burst (gelatinization) this makes the bread rise even more
Water, CO2 and Alcohol escape during baking
Bread changes colour while baking as dextrin forms leaving a baked golden crust (dextrinisation)
