Filter Pans set up

  • Crumb screen sits on top of filter pan, push towards back of fryer
  • Make sure to remove shipping bar from fryer or it wont go in
  • Remove the red cap from quick connect, and connect filter pan drainage
  • ensure filter pan cover is in place

  • Square has 90 degree corners which make cleaning more difficult
  • Cooks the exact same, and can do ancillary food items (fries etc.) but just because its bigger doesn’t mean you can cook more.

- Oil is emptied into Cady every 7-10 days - 80lbs capacity - Has hand crank with hose to pump oil into cady and out - system for people who don't have RTI - Oil need to be hot to crank, anything below 150deg will start to get difficult, oil will get viscous and difficult to move through crank

How to fry chicken and lay it out
- Always cook smaller pieces last, biggest first. - Order is Breast, thigh, legs, and then wings - Drop in Breast, then thighs, then legs, then wings and NOW start timer.
