What is it gin

A

Gin is a clear, un-aged ethyl alcohol flavored with juniper berries (juniperus communis) and other flavoring substances known as the‘botanicals’.
The predominant flavor must be juniper and they must have minimum retail strength of 37.5% abv.

Early 11th century

A

• Benedictine monks in Salerno, in southern Italy, in a monastery
surrounded by an area rich in juniper trees.
• The monks used it to distill sharp, fiery, alcoholic tonics, one of which was distilled from wine infused with juniper berries.

18th century

A

The government allowed unlicensed gin production and thousands
of gin-shops sprang up throughout England, a period known as the
Gin Craze.
• The Gin Act 1736 imposed high taxes on and was gradually reduced and finally abolished in 1742.
• The Gin Act 1751 was more successful, however; it forced distillers to sell only to licensed retailers and brought gin shops under the jurisdiction of local magistrates. Правительство разрешило производство джина без лицензии и тысячи

Maceration
 Gin botanicals such as juniper are soaked in strong alcohol in the still for a period of time.

Vapour Infusion

A

They’re placed into baskets in the still, above the base Spirit, which evaporates and rises up and infuses with the botanicals when boiled.
