Vitamin C Concentration in Fruit Juices
Aim:
To investigate the vitamin C concentration in different types of fruit juices
Brief description of experiment:
Iodine solution was used to titrate samples of fruit juices using starch solution to indicate the end point. This was repeated until concordant results were obtained for 3 different juices (orange, pineapple and cranberry).
Safety glasses were worn throughout and the iodine solution was poured below eye level to prevent eye damage.
Expected averages:
Orange juice: 0.00225L
Pineapple juice: 0.0018L
Cranberry juice: 0.0023L
Graphical representation:
Y axis: concentration of vitamin C (mg/ 100ml)
X axis: type of fruit juice
Scale on y axis: 0-45 for every large box go up by 5
Cranberry could be highest, then orange, than pineapple
Expected values from calculations:
Orange juice: 39.6mg per 100ml
Pineapple juice: 31.68mg per 100ml
Cranberry juice: 40.48mg per 100ml
Analysis:
My value of concentration of vitamin C in 100ml of orange juice is 39.6mg
However, the internet data shows a value of 28mg per 100ml.
My results were higher than that of the internet source by 11.6 mg per 100ml.
My value of concentration of vitamin C in 100ml of pineapple juice is 31.68mg
However, the internet data shows a value of 30mg per 100ml.
My results were 1.68mg higher than that of the internet source per 100ml.
My value of concentration of vitamin C in 100ml of cranberry juice is 40.48mg
However, the internet data shows a value of 24mg per 100ml.
My results were higher than that of the internet source by 16.48mg per 100ml.
My results for cranberry juice were furthest from the internet source, then it was the orange juice and finally pineapple juice was closest to the actual value.
All my values show a higher concentration of vitamin C than the internet source.
Both mine and the internet data show that the vitamin C content varies in different fruit juices, however my results show different results for the highest and lowest concentrations. My results show cranberry juice to have the highest vitamin C concentration, then orange juice and pineapple juice as the lowest whereas the internet data shows pineapple has the highest, then orange and finally cranberry juice with the lowest concentration.
