When a river flows over an area where a band of hard rock lies (granite ) across soft rock (sandstone)
The soft rock erodes more quickly than the resistance hard rock creating a veryical drop -water fall

As the fall increases in size on the waterfall the material that carry its load create a deeper pool at the bottom of the water fall
As the water falls into the plunge pool its splashes against the back wall and solution eeodes away the backwall undercutting the waterfall
