Irish Whiskey & Scotch Whisky?

The barley used in Irish Whiskey is typically not Malted. This gives it a lighter and more delicate flavor.

The Irish also do not use Peat as a feul source for their fires, so they are not as smoky as Scotch.

The reason for the Irish noy using a high percentage in their Whiskey is an interesting one.

This was done as a way to avoid paying taxes, more than anything else. In the 1700’s the English had enacted taxes on all finished whiskeys. In an effort to avoid this producers started distilling in secret.

The English changed the tax from the finished to product to a tax on the malting process. The smoke from the malting is much more difficult to hide since it can be seen from miles away.

The Scots starting malting at night (hence: Moonshine = illegal liquor), the Irish just stopped malting all of their barley.
