- Nebbiolo offerings limited to Langhe Nebbiolo and Barolo
- no chemical fertilizers or pesticides
- all work done by hand
- fermented in concrete with rudimentary temp control
- kept on skins 30-50 days depending on vintage
- Pump-overs are used early in the fermentation, followed by prolonged Capello Sommerso, or submerged cap maceration
- 2.5-3 years in untoasted slavonian oak botti
- bottled 3 years after september harvest and held for a year before release

- Wines are fermented with indigenous yeasts in ancient tini, tall upright oak vats, without temperature control and punchdowns are carried out by hand.
