Requirements for Vin de Paille in the Jura

- Dried for min 6 weeks, 20hl/hc, pressed between christmas and february
- Min 3 yrs aging including a min 18 months in neutral wood barrels - (until Nov.15 of the 3rd year following harvest)
- may be released on December 1 of the third year following the harvest
- 100 kg of grapes give about 18l of vin de paille.
- may be labeled as Arbois, L’Etoile or Côtes du Jura

- Min 6 years and 3 months in barrel (228l) without ouillage (topping off). (Dec 15 of the 6th year)
- may be released on January 1 of the seventh year following the harvest
- Château Chalon: min 12%
- Côtes du Jura/Arbois/l’Etoile: min 10.5%
- Aging includes min 60 months ’sous voile’ — a yeast blanquet (voile) develops on top of the wine and protects it against oxidation.
- The voile may take 2-3 years to fully develop, which is why the wines show a degree (but not total) of oxidation
- Not fortified
- May be declassified to Côtes du Jura AOP for poor vintage — 1974, 1980, 1984, 2001
