Chymotrypsin:

A

Protease. Cuts polypeptides into smaller fragments. Contains 245 amino acids.
3D structure was determined by crystallography.
Mainly B-sheets and a few a-helices.
Made in pancreas and used in digestive system. Cleaves peptide bond near large hydrophobic amino acids by nucleophilic substitution forms acid and amine.
