Note: The base spirit for a Manhattan has changed multiple times over the decades, swapping between rye and bourbon. If the guest calls for rye, lower the bitters by a dash.
A call for a Lower Manhattan would use Irish whiskey (Kilbeggan).
A Perfect Manhattan would split the vermouth 50/50 between sweet (red) and dry (white).
A Black Manhattan subs the vermouth out for a rich aromatic amari. Use Averna in this case.

Note: Base Spirit to Vermouth ratios have varied over the years, originally starting at 1:1. Modern martinis usually call for a 4:1 ratio of base to vermouth, but it is prudent to always ask your guest how dry they’d like it. A call for a ‘bonedry’ martini would be just a vermouth rinse for the glass and none stirred into the cocktail.
A call for a Gibson is a gin martini garnished with cocktail onions which we do sometimes carry.
