Rama - En Rama

A

a label reference to bottling biologically aged sherry directly from cask without filtration. Or, minimal clarification or filtration.

Vino de color

A

A dark, concentrated wine traditionally used to add color and character to sweetened sherries. It is produced by adding arrope or sancocho with grape must, which then fermented to form a low alcohol wine with pronounced sweetness.

Pata de gallina

A

Literally - hen’s foot. A full bodied style of Oloroso, with an elevated level of glycerol that can give an impression of sweetness, although the wine is dry. The name comes from the shape of a chalk mark used to classify the style on the casks in the cellar.

A

Literally “fatness” or “richness”; a full bodied presence or girth derived from oxidative aging. It is typically found in oloroso, and often Paolo Cortado, but not in an Amontillado.

What is acetaldehyde?

A

A volatile compound formed by the oxidation of ethanol. Both yeast and acetic acid bacteria can oxidize ethanol. Sherry typically contains much higher concentrations than other wines.

A

There is Tajon - which is up to 80% limestone

LanteJuela and barrajuela have lower levels of limestone with slightly more clay

A

This concentrates sugar. Asoleado is sunning Pedro Ximenez grapes on straw mats to dehydrate the grapes.

What is a bota desmayada?

A

translates to fainting cask.

a biological wine that is low in alcohol because it is evaporating at a higher rate than normal. The abv is falling below 15%.

A

A cask that has the word NO written on it. This communicates the contents of the cask are unique and it should not be blended.
