Spaghetti is de cecco

Sauce is a besciamella, a rich cream sauce with nutmeg and Parmesan

Carbonara means coal burner (abundance of black pepper)
Started by rendering pancetta, then frying scallions and black pepper in the fat then pasta water and noodles are added the one egg Is added to creates binder of the sauce allowing the sauce to become rich and creamy
The pasta bucantit comes from the word buco means hole

Sweet garlic is whole garlic cloves that is roasted in Cinzano( Italian vermouth) until it becomes sweet and syrupy coating each clove
The dish is then cooked down in the promodoro sauce and finished with bread crumbs and basil
