A

How do proteins get their shape and how do temperature affect them?

A

Proteins form spirals, sheets and other complex shapes. They are kept in these shapes by intermolecular forces.
When the proteins are heated, the bonds are broken which allows the protein to change shape (denature). This change in shape causes the texture of food to change when heated.
