proteins Flashcards
(11 cards)
What are proteins primarily known for in animal tissue?
Major structural materials and involved in life processes.
What are the building blocks of proteins?
Amino acids.
What two functional groups do all amino acids contain?
Amino group (—NH2) and carboxyl group (—COOH).
How are proteins formed from amino acids?
By linking many amino acid molecules together through condensation reactions.
What occurs during condensation reactions in protein formation?
The amino group of one amino acid and the carboxyl group of another join, eliminating water.
What is the link formed between two amino acids called?
Peptide link (—CONH—) or amide link.
What are essential amino acids?
Amino acids that must be acquired from the diet.
What process during digestion produces amino acids from proteins?
Enzyme hydrolysis.
What happens to long-chain molecules within proteins?
They form spirals, sheets, or other complex shapes.
What occurs to proteins when they are heated?
Intermolecular bonds are broken, causing denaturation.
What effect does the denaturing of proteins have on food?
Causes changes in texture when cooked.
