Quality factors and how they are measured Flashcards
(28 cards)
What are 7 factors that contribute to acceptability?
The 7 attributes that contribute to acceptability are Nutritional value, Microbiological safety, Convenience, Stability, Cost, Sensory characteristics, and “Greening effect”.
Define: quality.
Quality is the sum total of all characteristics that determine the acceptance of the product in relation to the intent of design.
Define: control.
Control is an activity which, in association with other activities, helps to achieve a specified or expected objective, product, or result. It can also mean as an act of commanding or directing a state of activity, or process by which a stipulated quality is attained.
Define: quality control.
Quality control refers to the control of all variables encountered in the process of producing a satisfactory, reliable, and economical product.
Define: statistical quality control.
Statistical quality control refers to the application of statistical techniques to quality problems for the scientific analysis and interpretation of data.
Define: quality assurance.
Quality assurance refers to the assurance that the customer will continuously receive a good quality prodeuct that satifies all the requirements embodied in the intent of the product.
Define: quality reliability.
Quality reliability refers to the chance or probability that the marketed product will function without problem or failure in accordance with the design, specification, and the required duration.
What is the order of interacting with food? (4 ways)
The 4 ways to interact with food are seeing, smelling, touching, and tasting, in that order.
What are the 3 major sensory attributes of food quality?
The three major sensory attributes of food quality are Appearance, Flavor, and Kinesthetics/Somesthetics.
What is the concept of flavor?
The concept of flavor is the sensation producted by the material taken in the mouth, perceived principally by the senses of taste and smell, and also by the general pain, tactile and temperature of receptors in the mouth. Denotes the sum of the characteristics of the material which product the sensation.
What 3 things flavor includes?
Flavor includes the Aromatics, the Taste, and the Chemical Feeling factor.
What are the 2 methods of measuring food quality?
The 2 methods of measuring food quality are objective and subjective/sensory methods.
What are the 3 major quality standards of food?
The 3 major quality standards of food are Research, Trade, and Government standards.
Describe: research standards.
Research standards are the internal standards set up by the company to help ensure the excellence of its product in a highly competitive market.
Describe: trade standards.
Trade standards are set up by the members of an industry on a voluntary basis to assure at least a minimum acceptable quality and to prevent the lowering of standards of quality for products of that industry.
Describe: government standards.
Government standards are set up by the government; some are mandatory to protect health and prevent deceptions; some are voluntary.
What are the 2 major agencies overseeing federal grade standards?
The USDA Agriculture Marketing Services and the Food Safety and Inspection Service.
What are the 3 parties involved in quality control?
The Producer, the Regulatory Agency, and the Consumer are the 3 parties involved in quality control.
How is the producer involved in quality control?
The producer has to deliver a good quality product in accordance with design specifications, as well as to provide a continuing assurance to the customer that accepted product is at a level of quality the customer reasonably expects. The product has to be satisfactory, dependable and economical.
How is the regulatory agency involved in quality control?
The regulatory agency must carry out sampling inspection, grading, and monitoring to ensure that the product meets the specifications, standard, and tolerances. The inspection agency helps the producer know the true state of the product quality and helps the consumer receive an acceptable product.
How is the consumer involved in quality control?
The consumer holds acceptance influences very heavily on the type, quality and cost of the product. Consumer preferences provides feedback which helps the producer determine the marketability of a product.
Describe: planned quality control.
Planned quality control maps out the process of food, and what foods will be used and created.
What are the 2 major concepts in product quality and safety?
The 2 major concepts in product quality and safety are Total Quality Management (TQM) and Hazards Analysis and Cricical Control Point (HACCP).
Who started HACCP?
HACCP was started by NASA.
