What is sedimentation?

A

Suspended soils in must left to fall overtime with gravity.

How does sedimentation work?

A

Chill juice to 4 degrees- reduces rate of oxidation and spontaneous fermentations.
Takes longer in large tall vessels- longer way to fall.
Clear juice transferred to ferm vessel, leaving solids at the bottom of sedi vessel (racking).
Solids left behind filtered by cross/depth filters.
Cheapest in terms of equipment, but £ in labour and time, and cost of chilling.

A

Rapidly rotating container that uses centrifugal force to separate the solids from the liquids.

What are the advantages of centrifugation?

A

Quick
Continuous (instead of batch)
Must as well as wine
Saves time and labour cost
